Although my mother has not confirmed it, I am convinced that my love affair with mangoes began at birth, when my mom alternated between mangoes and breast milk. I can eat mangoes all day, every day and still want more. I suppose you can call me a mango addict, a label I wear proudly.

So let’s talk about this dressing! While not many things come close to my love for mangoes, meal prepping is a close second (check out My Free Meal Prep Pocket Guide). I wanted to try something new with my salads that would last all week and taste amazing!

Mango Dressing Salad

This recipe is the result of a mango addict experimenting with spices and letting her imagination run free. I went on a quest to make the perfect dressing/sauce because let’s be honest, there is no such thing as eating too many mangoes.

I start with ripe mangoes, my favorite spices, a freshly squeezed lime and ½ a cup of water!

Mango Dressing Prep

Begin by cutting your mangoes in chunks and removing the skin. Place in a blender. A smoothie cup will do the trick!

Add all your ingredients with to the blender (except the water, we will use that later) and blend it until it is smooth.

You can add less or more water to get the desired consistency. I used ½ a cup. Then serve and enjoy!

You can even enjoy it with baked oyster mushrooms!

Ingredients

  • 2 Ripe Mangoes
  • 1 Tsp of Cayenne pepper
  • ½ Tsp of Sea salt
  • 1 Tsp of Onion powder
  • 1 Tsp of Oregano
  • 2 Tbsp of Olive oil
  • 1 Freshly squeezed lime
  • ½ A cup of water

Instructions

  1. Cut your fresh ripe mangoes into chunks and place them in a blender or smoothie cup.
  2. Add all your spices, the olive oil and the freshly squeezed lime to the blender.
  3. Blend the mix until smooth.
  4. Add water to achieve the desired consistency, I used ½ a cup (feel free to add more or less).
