Confession: I have a love hate relationship with Pinterest. Earlier this week I was inspired to find a new recipe because of an overachieving friend. He was preparing to make some spectacular 100 year aged whisky triple fried sticky wings, ok he didn’t make that but you get my point. Of course I went to the rolodex of magic and unfulfilled dreams known as Pinterest. Here was my journey of trials and triumph via my Facebook posts…
1:03a arugula salad, avocado, and some kind of tequila based dressing that really goes on chicken… Eff pinterest.
This is what I ultimately ended up with, the next day. Tequila glazed chicken thighs, Arugula and Zesty Black Bean Salad.
The Black Bean Salad I will take credit for. The new year is coming so you know what that means? More vegetables so I can reverse the debauchery known as my 30th birthday in 2 weeks.
What You Need
- 1 Can Black Beans Rinsed and Drained
- 1 Tomato Chopped
- 1/2 Cup Sweet Corn
- 1 Teaspoon of Honey
- 3 Tablespoons of White Vinegar
- 2 Tablespoons of Olive Oil
- Half an Avocado; Chopped
- Sprinkle of Dried Oregano (optional)
- Mix ingredients and chill.
