Whoa that was a read wasn’t it? Beyonce let everyone have it in the song Survivor. LeToya, LaTavia, Tom, Dick, Harry, me, you and yo’ momma too got the clapback heard around the world. If you have been reading for a while you know I am a sucker for themed snacks from my easy Egg Foo Young (Money) recipe to Scandal Snacks Series this time is no different. Yesterday, I posted a recap of my FIRST “Do It Yourself” craft class/party. It was all things Beyonce, after all it was literally inspired by Bey herself. The event was a success! Full of good energy and great snacks. My “In My Bag” Spicy Red Bean Dip made its debut and the guests loved it. Today my “Survivor” Salted Caramel Brownie recipe will get it’s moment in the sun to the chagrin of Destiny’s Child fallen members.
First you need about a cup of fresh popped popcorn I used my West Bend Air Crazy Hot Air Popcorn Popper when I tell you this popper has been clutch over the years. Super affordable and doesn’t take up too much space, I live in Brooklyn this is very important. I don’t even fool with microwavable popcorn anymore I am too bougie. #SorryNotSorry. Break your popped popcorn and lay on the bottom of a prepared baking pan this is what is going to give it a nice crunch.
Next up is the brownie batter. You can make your brownies from scratch but in this case I “jazzed up” some Pillsbury Milk Chocolate Brownie Mix, Rachel Ray style. Evenly spread your batter over the popcorn base and add more popcorn on top.
Give your adorable niece the mixer bowl for entertainment purposes.
Bake according to the directions on the box.
While the brownies are baking it is time to make the caramel sauce.
What You Need
- 1 packed cup brown sugar
- 1/2 cup half-and-half
- 4 tablespoons butter
- Pinch salt
- 1 tablespoon vanilla extract
Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it gets thicker. Add the vanilla and cook another minute to thicken further. Turn off the heat, cool slightly and pour the sauce into a jar. Refrigerate until cold.
After your brownies are baked and cooled but still warm, drizzle chilled caramel sauce over them.
Cut into bite sized snacks and enjoy!
You can totally try this with potato chips instead of popcorn but that may leave you a bit thirsty. Unfortunately, you have to wait until tomorrow for my “Surfboardt” simple syrup recipe to quench that thirst. In the meanwhile please don’t diss me on the internet, your momma taught you better than that.
- Brownie Mix
- 1 Cup of Fresh Popped Popcorn
- 1/4 Cup Caramel Sauce (Homemade or store bought)
- 3 Tablespoons of Matthew Knowles' Tears or A few pinches of salt
- HEAT oven to 350°F. Coat 9-inch square baking pan with no-stick cooking spray. Prepare popcorn and brownie batter according to package directions using oil, water and an egg. Place popcorn evenly in prepared pan. Spread batter over the popcorn base then add more popcorn on top. Bake for 20-30 minutes.
- Drizzle with 1/2 cup caramel topping tilting pan to spread evenly.
- Sprinkle a couple pinches of salt to finish it off.
- CUT brownies into squares. Place in serving dishes.
