“Sweet Baby” The nickname that Fitz had for Olivia
and his second mistress Amanda it is also the title of the series premiere episode which aired on April 5, 2012 #funfact. This ice cream sandwich is delicious I made it for Thanksgiving but it is only fair I share the recipe!
What you need Yields 20 cookies or 10 sandwiches
2 Cups of All Purpose Flour
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
2 teaspoons of cinnamon
1/2 teaspoon of ginger
1/2 teaspoon of allspice
1/8 teaspoon of nutmeg
1/2 teaspoon of salt
1 stick or half a cup of unsalted butter
1 cup of white sugar
3/4 cup of brown sugar
1 egg (room temperature)
1 teaspoon of Vanilla extract
1 cup of sweet potato puree
*You may use a can of sweet potato puree
NOT sweet potato pie filling
or roast a sweet potato and puree it in a blender
What to do
1)Preheat oven 350 degrees F.
2) Combine all dry ingredients except the sugars (flour, spices, powder and soda) in a medium bowl. In a separate bowl combine white and brown sugar with butter and mix well until fluffy then add egg and vanilla. Stir in sweet potato puree and beat in dry ingredients. Drop by tablespoonfuls on to lightly greased cookie sheets.
3) Bake for 15 to 18 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for about 5 minutes before transferring to wire racks to cool completely.
4) Assemble by “sandwiching” your favorite ice cream in between two cookies, drizzle glaze, place in a parchment paper lined cookie sheet and freeze until ready!
1 cup of powered sugar
1 tsp of vanilla extract
3 tbsp of unsalted butter
1 1/2 cup of small marshmallows divided
1/4 cup of water
roasted walnuts (optional)
What to do
Mix in bowl sugar, vanilla and salt. Melt butter in 1/4 cup water on low heat and add 1 cup of marshmallows until melted. Whisk into sugar mixture.
You can toast the remaining marshmallows and walnuts for extra flair 🙂
