Chorizo and Black Bean Quesadilla Recipe

Heeey folks it has been a while but between work and Halloween I haven’t been able to watch Scandal!  I hope ”Quiet as it’s kept” Chorizo and black bean quesadilla with avocado crema makes up for it. Too many secrets too little time. Murder, sexual assault, questionable paternity all in one episode!  #ScandalSnacks

What you need

Chorizo and black bean quesadillas 

1 link of Chorizo or a handful of tofu crumbles if you aren’t into pork.

2 Wheat flour tortillas

1 serano pepper (chopped)

1/2 cup black beans drained

Sprinkles of cheddar cheese (not a lot summer is around the corner)

A couple sprigs of cilantro

1/2 of a tomato (chopped)

2 cloves of garlic (chop them)

1/4 cup of chopped onion

Splash of lime juice

Heat a large frying pan. Add a small amount of oil or butter (about 1/2 teaspoon) and spread it around the bottom of the pan Take your tortilla and place it in the pan. Flip the tortilla over a few times.

While still in the pan sprinkle your cheese onto the warm tortilla and allow to melt.  Add a thin layer of the other ingredients on top of the cheese.

Some people like to add another tortilla on top (like a grilled cheese sandwich) but I like to fold the tortilla it looks cuter lol feel free to choose. Cook a little bit more on both sides and you are done.

Avocado Crema

1/2 of a hass avocado cut in half lengthwise, peel and pit removed

1/4 cup of greek yogurt

1/2 teaspoon of Sriracha sauce

1 teaspoon of lemon juice

Take all of the ingredients mix well in bowl or blender.

Brown the meat of your choice and drain.

In a bowl combine meat with everything except cheese/tortillas and set aside.
