Pineapple Fried Rice Recipe

Imagine curled up watching some Netflix and enjoying Thai pineapple fried rice in the comforts of your own home. This classic recipe is truly amazing and simple to make. Add delicious bites of pineapple to leftover rice to create a beautiful side dish to any meal! Serve it in a carved-out pineapple like they do in Thailand to make it as a fun main course. Cauliflower rice makes an low carb excellent substitute.

  1. In a small bowl, whisk together soy sauce, sesame oil, ginger powder and white pepper; set aside.
  2. Heat olive oil in a large skillet or wok over medium high heat.
  3. Add garlic and onion to the skillet, and cook, stirring often, until onions have become translucent, about 3-4 minutes.
  4. Stir in carrots, corn and peas, and cook, stirring constantly, until vegetables are tender, about 3-4 minutes.
  5. Stir in rice, pineapple, green onions and soy sauce mixture. Cook, stirring constantly, until heated through, about 2 minutes.
  6. Serve immediately.

  3. 1/2 teaspoon ginger powder
  4. 1/4 teaspoon white pepper
