This was said in my best Marshawn Lynch voice. Once upon a time I made the bold proclamation that Jerk Chicken Is The Greatest Chicken In The World. I still stand behind that statement and gave evidence to prove it. Plenty of health benefits and delicious taste. Yes, it is better than fried chicken and Bbq chicken. #SorryNotSorry. Unfortunately, I did not give you the tools to make your own seasoning. It took a while but I have perfected it and can no longer keep this goodness to myself.

This is what you need

  • 2 Tablespoons of Coriander
  • 2 Tablespoons of Ginger
  • 2 Tablespoons of Garlic
  • 2 Tablespoon Brown Sugar
  • 1-2 Tablespoons of Cayenne Powder or West African Pepper (You can adjust depending on your sensitivities)
  • 1 Tablespoon Onion Powder
  • 1 Tablespoon of Dried Thyme
  • 1 1/2 Teaspoons of Allspice
  • 1 Tablespoon of Kosher Salt (You can adjust depending on your sensitivities)
  • 1 Teaspoon of Black Pepper
  • 1/2 Teaspoon of Nutmeg
  • 1/2 Teaspoon of Cinnamon

Blend well, store in an airtight container like a beloved mason jar for up to six months.

I like to make my own seasoning because I know exactly what is going into it especially when it comes to salt intake. This seasoning is awesome you can put it on everything to get a “taste of the islands.” Season your meat or sprinkle on your veggies, you can’t lose. You can even mix it with with mayo or ketchup to jazz up your burgers this summer. This is some chicken thighs, Kelewele (which is spiced sweet plantain a Ghanian treat) and wild arugula.
