Curry Chicken Nachos: The Recipe You Need In Your Life

Yes, I know saying something is a need is debatable but curry chicken nachos is a NEED. Your Superbowl shindigs will level up with this treat, Trust me. Have I steered you wrong yet? Maybe once but we have moved on from that. I am a BIG fan of fusion meals. Putting your own spin on things is like crafty culinary DIY. Growing up in the melting pot known as New York City I’ve had the pleasure of tasting flavors from all over the globe, with Caribbean being my favorite. Indian and Mexican round out the top 3 but third is nothing to scoff at. 

With their powers combined I bring you… 

CURRY CHICKEN NACHOS!

Is your mouth watering yet? It should because these are amazing. I took a beloved dish such as Nachos and combined it with a Caribbean and Indian staple like curry and pow your taste buds will never be the same.

The concept is pretty simple. Replace grilled chicken, refried red beans and sour cream with refried chick peas, curry chicken and cucumber sauce.  This recipe is best with leftover curry chicken. Sidebar can we talk about how amazing chickpeas are?

What You Need

Refried Chickpeas

  • 1 15oz can of Chickpeas, Drained and Rinsed
  • 1/4 Cup onions, chopped
  • 2 garlic cloves, chopped
  • 2 Tbsp. chopped parsley or cilantro (optional)
  • 1 tsp. lemon juice
  • 1 tsp. ground cumin
  • 1/2 tsp. chili powder

Combine all ingredients, blend with a food processor or stick blender until smooth and creamy.

Transfer the mixture to a skillet and in the oil, over medium heat, cook all ingredients together.  Stir occasionally.  The refried chickpeas are done when all of the flavors are combined well and the desired temperature is reached. Set aside.

What You Need

Chicken Filling

  • 2 Cups of Leftover Curry Chicken
  • 1 Bags of Tortilla Chips
  • 1 Cup Tomato, Chopped
  • 1/4 Cup Green Onion, Chopped
  • 1 1/2 Cup of Mexican Cheese Blend

Combine curry chicken, tomato, green onion with refried chickpeas.

In a prepared baking sheet: Spread tortilla chips, layer chickpea/chicken mixture and top cheese blend.

Broil in the preheated oven (350 degrees F) for 5 to 7 minutes or until cheese is melted, watching carefully to prevent burning.
